Non-alcoholic Clover Club cocktail in a coupe glass with raspberry garnish

NA Clover Club

This classic cocktail originated in Philadelphia’s Bellevue-Stratford hotel. This non-alcoholic version is also vegan!

Ingredients:

  • 2 oz Gin alternative
  • 0.5 oz Lemon juice
  • 9 fresh raspberries*
  • 1/4 oz simple syrup
  • 20 ml aquafaba

Step 1:

In a cocktail shaker, muddle simple syrup and 6 fresh raspberries.

Step 2:

Add gin and lemon juice. Dry shake for 30 seconds.

Step 3:

Add ice to the cocktail shaker (about halfway). Shake again until very cold.

Step 4:

Double strain into a chilled coupe glass, and garnish with 3 speared raspberries.

(*Note: the traditional Clover Club uses raspberry syrup, which is easy to make at home. Replace the muddled fresh raspberries with about 20 ml of the syrup.)
